cinnamon scented raspberry filled dark chocolate truffles
i have been thinking of these chocolate truffles for over a year now. last christmas i had this idea of making raspberry filled chocolate truffles & made them but they did NOT turn out. it wasn't that the flavouring wasn't good it was how i made them.
for some reason i thought it was a better idea to mix the chocolate and the raspberry filling all together into one big mess! and then i thought i could roll that whole large messy mixture into these perfect little balls and call it a truffle making day! well, it didn't quite work out that way.
that big messy chocolate concoction was just that, a big mess! don't get my wrong, it tasted good, one of my besties and i ate it by the spoonful while we watched christmas hallmark movies. a guilty pleasure everyone should get on board with over the holidays...watch a couple hallmark movies and tell me they are not the worst best things you could ever watch!? i dare you too! anyways as much as the flavour was there they were not pretty and i kinda just shelved that idea until now...
now, do prepare to get your hands a tad messy during the making of these truffles, but all that chocolate goodness covering your hands is well worth the final rolled up bite! the chocolate is deep and dark {i always use at least 75% or above dark} and the filling is sweet & aromatic. i rolled them three different ways, the classic cacao {or cocoa}, powered sugar and in chopped almonds. you could also choose a different nut, maybe walnuts or pecans, coconut would also be really delicious.

cinnamon scented raspberry filled dark chocolate truffles
ingredients
8 ounces of good quality dark chocolate 75% or higher
1/2 cup heavy cream
1 tbsp pure vanilla
2 cups frozen raspberries
1/2 tsp cinnamon
4 tbsp of maple syrup
1 tbsp vanilla
2 tbsp cornstarch + water
directions
chop up the chocolate into small pieces and place in a medium size bowl. in a small sauce pan, bring the cream to a simmer, scraping the edges every few minutes.
pour the warmed up cream over the chocolate, add the vanilla and let this sit for a few minutes. then stir until the chocolate has melted. place in the fridge for 4-6 hours or overnight.
in another small sauce pan add the raspberries, cinnamon, maple syrup and vanilla. bring to a bubbling boil {for 1 minute} then down to a simmer until the raspberries become compote like {about 10 minutes}. mix the cornstarch with a bit of water and pour into the raspberry mixture, stir and cook for another 3 minutes {you may need to add more cornstarch depending on how thick the mixture is, you want it to be quite jam like so that it holds together when rolling with the chocolate}. transfer the compote to a bowl and let cool to room temperature. place in the fridge for 4-6 hours or overnight.
once the compote and chocolate has chilled completely you can start to roll!
with a large spoon take about 2 tablespoons worth of the chocolate ganache, using your fingers make a flat circle, then spoon about 2 tsp of the raspberry compote into the middle of the ganache and gently fold the edges of the chocolate ganache around the compote, using your palms roll into a solid closed ball. coat in your favourite mix and continue rolling until all the truffles have been made!
if you have extra compote left over, not to fret, it makes for a delicious yogurt parfait bowl, is amazing on on toast with some almond or peanut butter or you know just make some more truffles!
