Chocolate Drenched, Almond Sprinkled Mandarin Slices

So this is hardly a recipe, I am not even sure I can call it one. It has three ingredients and is ridiculously easy but the end is so good, actually ridiculously good, silly good, it would be absurd not to share.  They would make the prettiest holiday work gift. A few chocolate dipped mandarin slices in a cute mason jar, wrap a bow around and voila, your workmates will think you slaved for hours making them this sweet treat but really they are a synch.

Orange and chocolate, it just goes together there is no denying it. One of my sweetest of girlfriends a few years back made me some chocolate dipped mandarin peels for Christmas and this is inspired through her. I remember her saying it was quite the process for the peels (as delicious as they were I was looking for ease with this ahem "recipe") as you have to boil them a few times to get the bitterness out and it just seemed too much a process for a lazy Sunday afternoon I was having last weekend when this recipe came together. But I highly recommend find a recipe for them if you have a little extra time one afternoon. 

I have the worst of worst cravings; I am both a sweet and salty craver. So after my salty dinner I like to have something sweet to curb the attack, it is usually a piece of rich dark chocolate (the good kind, the fair trade kind, the real kind, the 75 % cacao kinda) but I was feeling the need for something more last Sunday. Then there I was standing in the kitchen staring at a bowl of mandarins, a dark chocolate bar and a newly bought bag of roasted almonds sitting on the island and here I am now sharing with you this non recipe, recipe!

After the chocolate hardens in the fridge and the mandarin slice gets extra cold inside these little nibbles have this cool, juicy, crunch thing going on that is delightful. They kinda reminded me of the Pringles ad, once you pop you just can’t stop, I was popping these slices into my mouth all night, actually so much so I didn’t even have any left to bring to work...


chocolate drenched almost sprinkled mandarin slices

ingredient

3 peeled mandarin oranges

1 (100g) dark chocolate bar

½ cup finely chopped almonds

directions

Peel and part 3 mandarin oranges, set aside.

Finely chop the almonds; I used a food processor to get them really fine.

In a double boiler on the stove melt the chocolate until it is smooth.

Cover a baking sheet with parchment paper. Dip or spoon the chocolate onto one end of the mandarin and then sprinkle with the almonds and place on the piece of parchment paper. Do this until each slice is coated and sprinkled. Place the baking sheet into the fridge for at least 30 minutes and then pop away!
